Grape
varieties :
• 90%
Auxerrois
• 10% Tannat
• Old
vines aged between 40 and 60 years old with low yields of about 18 hl per
acre. The grapes are harvested only after a very thorough and selective sorting.
• Fermentation in stainless steel tanks
with temperatures controlled at 30°C. The marc is either punched down
or the juices pumped over, and this method allows for greater complexity to
be obtained in the finished wine.
• Ageing in oak barrels, partly new, for 12 to 14 months, gives even
greater splendour to this wine, which is without doubt a flagship of its appellation.
• Powerful and with great length, this “Cuvée Particulière”
concentrates a maximum of the characteristics of a great wine : colour, rich
silky tannins, complex aromas with notes of vanilla, chocolate, truffles and
ripe fruits, and spicy notes of oak on the palate.
