
After malolactic fermentation, it spends 16 months in new oak barrels. In order to marry the aromas of the wine with the wood notes of the different barrels, the wines are blended in large oak casks where they spend a further six months before bottling.
A blend of :Dark ruby in colour. The nose is a complex mixture of fruit and wood notes,
after a gamey and herby first impression. Rich fruit to start followed by
remarkable depth and complexity. Magnificent finish: peppery with tannins
starting to mellow.
Best drunk at 18°C with meat, game or rich cheeses.

• Tasting notes : A brilliant coral colour, with a fresh, lively nose and a touch of vanilla. The first impression is of a refreshing, delicate and elegant wine, with a surprising balance between fruit, acidity and oak notes.
• Best drunk at a temperature
of between 8 and 10°C, as an aperitif or to accompany charcuterie, seafood,
salads, barbecued meats or even foie gras. It also marries well with Asian
or Indian cuisines.
