The Gaillac vineyard was founded by the Romans. In the Xth century the wines were produced by the Benedictines from the St Michel abbey in Gaillac: the vines were cultivated by drudges under the control of the St Laurens’ chapel monks situated in the near hillsides.
Domaine des Terrisses has been a familial estate since seven generations: the year 1750 is the estimated date of the estate construction plantureous foundations built in “Terrisses”, mud land blocks mixed with broken straw.
Starting in 1984 we adopted an inter-row grassing system, then progressively natural grassing. It allows us to fight against erosion, to regulate the strength as well as the production reducing to a minimum the entrants for a better respect of terroir and its microbic life. The work of the soil is done as a complement.
The Terrisses terroir contains a lot of clay; sometimes up to 60% of a parcel:u173 - deep inflated clay in the middle of the slopes that gives more substance and richness to the red wines,
Located closer to the Mediterranean Sea than to the Ocean, we benefit in summer from a dry and warm climate with very smooth autumns and temperate winters due to oceanic influences.
In addition to the old cellar dedicated to the wine-ageing, the winery re-organized several times to better adopt new technologies. The latest improvments concerned the system functionality and the respect for grapes and wine respect: conveyor belts, thermo-regulated stainless vats, tangential filter. 5% Effervescent (Mauzac, Loin de L’œil)
